Spinach Artichoke Bow Ties

I found this recipe¬†for bow ties while browsing through Pinterest. I made a few changes to it, which I listed below. This is a great summer recipe because it’s easy to make on those hot summer nights. Pair it with a light salad for a complete, hearty meal.

1 package bow tie pasta

2 oz. light cream cheese

1 cup shredded low fat mozzarella

1/4 cup all purpose flour

1/2 cup milk

1 tsp salt

1/2 tsp garlic powder

1 small bag frozen spinach

1 can artichoke hearts

freshly ground pepper to taste

red pepper flakes to taste

1. Cook and drain pasta according to package directions

2. While pasta is cooking, in a blender, puree cream cheese, shredded cheese, flour, milk, garlic powder and salt (mixture may be a little thick, so add more milk to your preference)

3. In a microwave safe container, defrost spinach

4. Chop artichoke hearts into small pieces (like the spinach)

5. When pasta is cooked, add spinach and artichokes, then pour cheese sauce, mixing to coat all pasta and veggies

6. Top with freshly ground pepper and pepper flakes
