Chunky Pineapple Chile Popsicle

The weather in New England so far has been unbelievably hot. The humidity has been through the roof and lots of people have been trying their best to stay indoors. However, next week is supposed to be on the cooler side, so I thought I would share this recipe I found from Self Magazine for a twist on a summer favorite.

Base: 2 cups cubed fresh pineapple

Sweetener: 3/4 cup pineapple juice (I used Pineapple Mango); 3 tbs sugar

Flavor: 2 tbsp fresh lime just; 1 tsp ground ancho chile

Booster: 1 cup coarsely chopped pineapple

1. Blend base, sweetener and flavor in a blender

2. Stir in booster for texture

3. Pour into eight Dixie cups (or popsicle mold)

4. Insert craft stick or plastic knife

5. Freeze for six hours
