Avocado Grilled Cheese

Grilled cheese sandwiches are somewhat of a staple recipe. They are easy to make and fun to eat (the cheesier the better). I followed this recipe (minus the tomato) and used Italian bread instead of French or sour dough. The avocado was so ripe and velvety, and the Monterey jack created the perfect amount of cheesy goodness. Serve warm or with a side of tomato soup for a wholesome and filling meal.
